Fresh Peach Cobbler

Fresh Peach Cobbler   
8-10 cups Sliced Peaches
1 cup sugar
1 tsp. cinnamon
½ cup tapioca
2 cups flour
1 cup sugar
2 tsp baking powder
1 tsp salt
2 eggs
⅔ cup oil
1. Place sliced peaches into a 9x13 baking dish. Sprinkle 1 cup of sugar, cinnamon and the tapioca, gently mix.
2. Mix flour, 1 cup sugar, baking powder and salt together: cut in beaten eggs and mix until it resembles crumbs.
3. Sprinkle topping over peaches. Drizzle the oil over the topping.
4. Bake at 375 for 30-40 minutes or until golden brown.
